Can the Vault 2.0 client work side by side with the Vault 3.0 client? And yes, I realize I cannot use 2.0 to connect to 3.0 and vice versa.

We haven't done any testing with 2.0 and 3.0 side by side. It might work, as long as you don't use the same working folders (since 2.0 and 3.0 use different working folder state formats). The windows sizes and locations will be shared, and there might be gotchas that we don't know about.

Immediately, you will have a problem installing, since it won't let you install both on the same machine. You will have to install one of them on a different machine and then copy the exes and dlls to a different place on your machine.
