I understand that Vault 5.0 now supports Shelving.

But is there an online example of this feature?

We don't have an online tutorial, however we have weekly online demos of Vault and Fortress. You might be interested in attending one to get a better idea of how Shelve works. The demos are interactive and allow questions from users. You can sign up here:
