How do I use vault to track what work a developer has done for say the last 7 days?

I need to track some productivity.

You will want to run a history query and filter for the files that person has worked with and filter it by date. There is also the web client where you can View Blame on files to see exactly what that user entered.

Something else you may find helpful is the recent checkins hyperlink, which you'll see right after you log into the Vault web client (http://<VaultServer>/VaultService/VaultWeb/ListRepositories.aspx). This single-click report will show you everything that has happened in the selected repository during the past 7 days. You can also drill in to get file histories, view differences, and show blame. It's very handy.
