Is there an option which will show me a list files which are checked out in a project? Please let me know.

A number of different ways:
1) Using the Admin Tools, find the Undo Checkout tab, and change the drop down to the respective repository.
2) Open the repository within the Vault GUI client, highlight $/, move to the Search tab, and Search for files checked out by All Users
3) Use the Vault Command Line Client (CLC) with the LISTCHECKOUTS command.
