UPDATE
Steps to fix are
- 1: Change the URLs in the Vault admin web page under Vault Standard Plugins
2: Find the web.config file under indexing to make sure it gets the updated URL as well.
3: Reset IIS with the command iiisreset at a command line or use Restart in the IIS Manager.

Thanks for your help, Beth. After our phone call this afternoon the message status of "Find in Files" is reading "Ready". I've also confirmed this functionality by using the Vault client and performing the quick test I showed you earlier. This test was successful.
For the benefit of future readers on how we resolved this:
1. I had a typo in the Vault Standard Plugins for the VaultNotifyService
2. We had to change the web.config file located at D:\Vault_wwwroot\VaultService\VaultNotifyService to "hard-code" the URL, effecting changing it from 127.0.0.1 to my Vault Domain.
