We're running the latest version of Vault 6.1 Std, and I was wondering if I can do something to mark the current versions of all code as a version release. So I'd have the source code to v1.0, v1.1, etc. I'd want to be able to retrieve all the code related to a release. Is this what Labels are used for?

If I wanted to pull out all the code marked with a label, how would I do that? So I could create a tree someplace that had the code as of a particular release...

In the Vault GUI client, select the folder that the label was applied at. Then go to View - Show Labels. You can right-click the label and select Get.
